Raffir Steak Knives

Introducing our new steak knife blades, the starting point of our “Scandinavian Dining” tableware series. Designed for both adventurous knife enthusiasts and food lovers seeking unique and functional gear. As fellow knife makers and food enthusiasts, we felt the existing choices for steak knife blades on the market were too limited.  That’s why we’ve created the original Raffir Steak Knife Blade series. Enjoy personalizing the handle and savor the experience of using it at your dinner table.

Design

Raffir’s steak knife blades are designed by our in-house product developer and knife maker, Michael Sort Mouritsen, with inputs from the rest of the Raffir crew. We created the blades in classic Scandinavian design tradition with functionality and  simple harmonic curves in mind. We also went through a lot of good dinners along the way to test and adjust the design. The result strikes a great balance between practicality and elegance.

We opted for a smooth, sharp blade instead of serrated edges, thus making it more elegant and easy for you to sharpen at home. The thoughtfully designed handle ensures that a single standard-size Raffir handle scale is sufficient for creating both scales of a steak knife when properly split. Additionally, the blade handle features three rivet holes for a robust handle scale attachment. Each blade also comes with three short rivets that can be used for an optional hidden-rivet attachment. By using these hidden rivets, drilled halfway through the back of the handle scales and attached inside before gluing, you can achieve a seamless and elegant handle surface without compromising strength.

Steel Type

The steak knives come in two different steel versions: 67-layer Damascus and 3-layer laminate. Both have a VG10 core steel that gives them a nice sharp edge. The core steel is then wrapped in a softer stainless steel to improve toughness and corrosion resistance. The VG10 core is hardened to 58-60 HRC.

Available Models

As mentioned above there are two different steak knife blade models depending on the steel type. Furthermore, you can choose to buy the blades individually or in four piece sets. If you choose the ladder option then the blades are wrapped in a four-piece gift box than can also serve as a presentation box for the finished steak knives.
